CHICKPEA SALAD

prep time: 10 minutes
1 cup soaked and boiled chickpeas
2 T. vegan mayo
1 T. yellow mustard
1 T. raw apple cider vinegar
red onion to taste
celery to taste
fresh dill to taste
dash himalayan pink salt
dash crushed pepper
dash turmeric or paprika
place all ingredients in a food processor and pulse. you can also mash by hand with a potato masher.
serve on fresh cucumber rounds topped with fresh sunflower sprouts.
