ASIAN CASHEW SALAD
v. gf. raw.
prep time: 15 minutes
1/2 head red cabbage
1/2 head white cabbage
3 medium grated carrots
1 cup edamame
handful raw cashews
2 mandarin oranges
dash crushed pepper
sesame seeds
dressing:
2 T. coconut aminos
fresh squeezed orange juice
1 T. maple syrup
grated ginger to taste
wash and chop fresh veggies and mix in cashews and dressing. top with fresh black pepper and sesame seeds.
for best taste let marinate a few hours in the fridge or overnight.
