RAW PAD THAI
v. gf. raw.
prep time: 10 minutes
5 large carrots
1 medium cucumber
1/2 head red cabbage
1/2 head cauliflower
handful cherry tomatoes
5 dino kale stalks
2 T. raw almond butter
2 T. coconut aminos
2 T. maple syrup
dash of cayenne
fresh squeezed lime juice
freshly grated ginger
using a vegetable peeler, peel the carrots into ribbons. chop veggies and mix dressing. top with extra fresh ginger.
best if let marinate for a few hours in the fridge.
