Fresh + Healthy Vegan Summer Rolls

I kind of have a thing for summer rolls, and if I had to choose only one food to eat for the rest of my life, yep... this would be it. But that's kind of cheating because there are endless different things to put in them (and don't even get me started with dipping sauces) so I would actually never be eating the same thing. but shhhhh, my answer is still valid and totally accurate. 

 

These are fresh, filling, and fun. 

I'm incredibly sorry if you haven't had these glorious rolls of heaven yet, 

finding these was honestly more life changing than finding a religion for me.

 

also whole foods sell these babies made in their prepared foods section

for an ungodly price...

 

whole foods also happens to sell 20 of the rice paper roll sheets that you use to make these... for a godly price compared to what'd you pay for their prepared rolls.

 

They are so simple to make & quite impressive for potlucks...

but taking these to potlucks means you need to share them.... so...... 

you can go ahead and decide how you want to play that one out. 

 

just kidding. you will be the local celebrity if you bring these babies anywhere.

 

 

LETS GET CREATIVE.

 

Prep time: 20 minutes 

Total time: 20 minutes (you goood girl) 

 

Ingredients:

8 rice paper roll wraps 

1 cup beets shredded 

1 cup carrots shredded 

1 cup red cabbage shredded 

1 cucumbers

1 large ripe hass avocado

1 large ripe mango 

1 bunch sweet basil 

 

Directions: 

Wash, Prep, and cut veggies. Set aside for easy and quick assembly of the rolls.

 

Take 1 rice paper roll and run it under warm water for about 5 seconds on each side

(muy importante that you are doing this with WARM WATER - if it is easier [or your tap water is not safe to drink] you can boil water, let to cool a bit and put in a round cake pan and submerge your rice paper rolls in the cake pan for 10 seconds) 

 

Place the rice paper roll flat on a damp plate (I find they stick to my wooden cutting boards, so I avoid using that as a prep space) - layer your veggies + fillings 

 

Fold bottom and top of rolls and then gently roll over once to seal the sides and then once more. They will look like a burrito! 

 

Place on a serving plate, aaaaannnnnnd repeat! 

 

Be mindful to not stack them on one another or pack them in tightly, they will stick together and the rice rolls will rip. NO BUENO. 

 

AND NOW MY PERSONAL FAVORITE, THE DIPPING SAUCE.

 

i'm a thai peanut sauce kind of girl - so that is ALWAYS my go to.

 

Hummus, Balsamic Vinaigrette, Pesto, and tahini based sauces are all delicious too. 

Get creative and do what you're in the mood for! 

 

My favorite Peanut Sauce Recipe:

 

1/2 cup natural peanut butter

3 tbs coconut sugar (or maple syrup)

1/2 tsp fresh grated ginger 

2 tbs rice vinegar 

1 tbs chili garlic sauce 

squeeze of fresh lime 

 

you can play around with this recipe and change it to your preference, add hot water for a thinner sauce or less liquid for thicker. 

 

it's amazing. Also, I recommend making double of this sauce because you'll honestly want to put it on every dish from this point on.
